Gayo Arabica: Indonesia's Hidden Gem in the Highlands of Aceh

The Gayo Highlands

Nestled in the heart of Central Aceh province, the Gayo highlands sit between 1,200 and 1,600 metres above sea level. The volcanic soil, consistent rainfall, and cool mountain temperatures create ideal conditions for Arabica coffee cultivation — conditions that have made Gayo one of Indonesia's most celebrated coffee origins.

The name "Gayo" refers to the indigenous Gayo people who have farmed these slopes for generations. Their deep knowledge of the land and traditional farming practices are inseparable from the coffee's exceptional character.

What Makes Gayo Special

Gayo Arabica is renowned for a specific flavour profile that sets it apart from other Indonesian origins:

  • Earthy, herbal complexity with notes of dark chocolate and subtle spice
  • Medium to full body — heavier than East African Arabicas but cleaner than most Sumatran profiles
  • Low to medium acidity that makes it approachable for a broad range of brewing methods
  • Excellent sweetness especially in wet-hulled and full-washed processing

Processing Methods

Gayo coffee is predominantly processed using the traditional wet-hulled (Giling Basah) method, which is unique to Indonesia. In this process, the parchment is removed while the coffee still has high moisture content (around 30–35%), then dried to export moisture of 11–13%.

This produces the distinctive earthy, low-acid character that specialty roasters around the world seek. Sooca also offers full-washed Gayo for buyers who prefer a cleaner, brighter cup profile.

Sourcing at Sooca Coffee

Sooca Coffee sources Gayo Arabica directly from smallholder farmers in the Bener Meriah and Aceh Tengah regencies. Each lot includes:

  • Farm GPS coordinates and farmer profiles
  • Harvest date and processing method documentation
  • Cupping scores (typically 83–86 SCA points)
  • Full Certificate of Analysis

We work with farmer groups who practice sustainable shade-grown cultivation, maintaining forest cover and biodiversity across their farms.

For Roasters

Gayo Arabica roasts beautifully at medium to medium-dark profiles. Its body and earthiness make it an exceptional base for espresso blends, and its complexity rewards filter roasters who develop it slowly.
